The Best Fish Dish You Will Cook in Camp
Fresh trout, hot cast iron and a little butter is all you need. This recipe comes together in under 20 minutes and works over a camp stove or an open fire.
Ingredients
- 2 whole trout, cleaned
- 2 tbsp butter
- 1 lemon, sliced
- Fresh thyme or dill
- Salt and cracked pepper
- Flour for dusting
Step-by-Step
- Pat the trout completely dry — dry fish means crispy skin.
- Dust lightly with flour, salt and pepper.
- Heat your cast-iron skillet over medium heat with the butter until it foams.
- Lay the fish in, skin side down, and cook 3–4 minutes without moving.
- Flip once, add lemon slices and herbs, and cook another 3 minutes.
Serve It Up
Serve over foil-grilled potatoes with a squeeze of fresh lemon. Pair it with campfire corn and you have a meal you will talk about until next season.

Made this last weekend and the skin was perfect. Definitely making it the whole summer.
